This is a 30 days challenge to cook without garlic and onion. I hope this challenge can be a kickstarter for people who want to start a low fodmap diet but don’t know where to begin. Cooking without garlic and onion can be really challenging because both give food a fragrant aroma. Without garlic and onion, food could be plain and boring. However, that can be solved with a little bit of creativities and a little bit of adventure. I came up with this challenge. 2 meals a day for 30 days. The recipes all have no garlic and onion in the ingredients but all are still very delicious. I hope these recipes can help many people like me who suffer digestive system problems.
這是一個三十天無蒜去蔥的飲食挑戰。希望這個挑戰可以讓想要嘗試低Fodmap飲食的人有一個開端。沒有大蒜和洋蔥的料理是很困難的,因為大蒜和洋蔥有個獨特的香味,讓食物更美味。沒有了他們,食物可能很平淡很無趣。然而,這是可以想辦法解決的。只是需要一些創造想像力和一點點冒險的精神。我因此發起了這個挑戰。一天兩餐,維持三十天沒有大蒜和洋蔥的料理。這些食譜都沒有大蒜和洋蔥卻都還是很美味。很希望這些食譜可以幫助到跟我一樣有消化系統困擾的人。
Korean Kimchi Tofu Soup (No Garlic No Onion)
Ingredients:
Chinese Chives…………………20 g
Dried Shrimps…………………..10 g (https://amzn.to/3SH2C6k)
Ground Meat……………………200 g
Minced Ginger………………….3 g
Korean Chilli Powder…………1 tbsp (https://amzn.to/3PKqVhK)
Water……………………………..4 cup
Korean Kimchi………………….150 g
Soft Tofu…………………………1 box
Fish Sauce………………………1 tbsp )
Green Leaves Veggies………200 g
Bean Sprout…………………….100 g (Mug Bean or Soy Bean)
Salt…………………………………1 tsp
Instructions:
1. When the pot is heated up, add oil. Add dried shrimp and Chinese chives, sauté for couple minutes.
2. Add ground meat (I use beef because this is what I had in the fridge). Add ginger.
3. Add Korean chili flakes
4. Pour the water.
5. Add tofu and kimchi.
6. Bring the soup to boil and then add fish sauce.
7. Turn to low heat and let it boil for 10 minutes. Add salt if the soup is not salty enough.
8. Lastly, add veggies and let it boil for 2 mins.
韓式豆腐湯(無蒜去蔥)
材料:
韭菜…………………20 公克
櫻花蝦……………..10 公克
絞肉…………………200 公克
薑末…………………3 公克
韓式辣椒粉………1 大匙
水…………………….4 杯
韓國泡菜………….150 公克
軟豆腐……………..1盒
魚露…………………1 大匙
青菜一把………….200 公克
豆芽菜……………..100 公克
鹽巴…………………1 小匙
做法:
1. 熱鍋加入油,將韭菜和櫻花蝦一起爆香
2. 加入絞肉 薑末
3. 加入韓式辣椒粉
4. 加入水
5. 加入豆腐和泡菜
6. 水滾了以後加入魚露調味
7.轉中小火,讓它滾十分鐘,不夠鹹再加一點鹽,夠的話就不需要
8.最後加入青菜和豆芽菜,再滾兩分鐘。
Dry-Fried Green Beans(No Garlic No Onion)
Ingredients:
Green Bean…………………300 g
Ground meat………………..50 g
Chinese Chives…………….20 g
Minced Ginger……………..3 g
Dried Shrimps……………..10 g (https://amzn.to/3SH2C6k)
Preserved Daikon………….20 g (https://amzn.to/3WDGV7k)
Chili Bean Paste……………1 tsp (https://amzn.to/3G75Bjj)
Soy Sauce……………………1 tsp
Soy Sauce……….2 tbsp.
Sugar………………………….1/4 tsp
Instructions:
1. Mix green beans with oil and place in airfryer.
2. Set 400°F for 10 minutes. Put aside when it’s done.
3. Heat the pan, add oil. Sauté shrimps and preserved daikon for couple minutes. Add ground meat and then Chinese chives and ginger. Sauté for 5 mins.
4. Mix chili bean paste, soy sauce, soy sauce and sugar. Pour the mixer into the pan. Sauté for 2 mins.
5. Add the green beans and it’s done.
乾煸四季豆(無蒜去蔥)
材料:
四季豆…………….300 公克
絞肉………………..200 公克
韭菜………………..20 公克
薑末………………..3 公克
蝦米……………….10公克
菜脯……………….20g
豆瓣醬……………1茶匙
醬油……………….1茶匙
米酒……………….2大匙
糖…………………..1/4小匙
做法:
1. 四季豆淋上一些油,拌勻。放入氣炸鍋。
2. 設定200℃氣炸約10分鐘,炸好放放旁邊備著。
3. 將鍋子放少許油,把蝦米菜脯炒香,絞肉放進去,加入韭菜和薑末。炒五分鐘。
4. 將豆瓣醬,醬油,米酒和糖攪勻後,倒入鍋子裡和肉混合。再炒2分鐘
5.加入炸好的四季豆,就完成了。
